This sweet and delicious cake-like bread is perfect for the family or guests!

Ingredients:
2 ½ Cups Flour
½ Cup Whole Wheat or Oat Flour
1 Tsp. Baking Soda
½ Tsp. Salt
1 Tsp. Cinnamon (more or less to taste).
½ Tsp. Allspice (may substitute pumpkin pie spice).
¼ to ½ Tsp. Ground Cloves (to taste).
½ Cup Butter
2 Large Eggs
1 ½ Cups Brown Sugar
3/4 Cup Sugar
1 Cup Buttermilk
2 Cups Grated Carrots
1 ½ Cups Raisins
2 ½ Cups Cream Cheese, softened
1 Cup Sugar
½ Tsp. Vanilla Extract

Directions:
1. Preheat the oven to 375º F.
2. Mix the flour and oat flour together in a large bowl.
3. Stir in the soda, salt and spices.
4. In another bowl, cream the butter and eggs.
5. Stir in the sugars and mix well.
6. Slowly add the buttermilk and mix until smooth.
7. Add the carrots and raisins to the bowl and mix.
8. Add the flour and other dry ingredients gradually, stirring well, but do not over mix.
9. Pour batter into two well-buttered loaf pans.
10. Bake for 50 to 60 minutes or until tops of loaves are browned.
11. Remove loaves from pans and allow to cool.
12. Beat the sugar and vanilla into the cream cheese.
13. Spread the top of each loaf with the sweetened cream cheese.
14. Slice carefully.

Yield: 2 large loaves. This is especially good served warm and topped with berries.
To freeze loaves, do not top with the sweetened cream cheese. Slice and wrap tightly. To serve, thaw in the microwave or at room temperature and add topping.
