Ingredients:
6 Medium-sized Zucchini
1 Cup Canned or Bottled Spaghetti Sauce (may substitute tomato sauce with Italian seasonings).
1 Cup Shredded Parmesan Cheese (may substitute other cheese).
ΒΌ Cup Sour Cream
ΒΌ Cup Mayonnaise
Β½ Cup Cottage Cheese
1 Tsp. Onion Powder (may substitute ΒΌ Cup diced fresh onion).
1 Tsp. Garlic Powder (may substitute one clove garlic, peeled and minced).
ΒΌ Tsp. Salt

Directions:
1. Preheat oven to 425ΒΊ F.
2. Slice zucchini into ΒΌβ rounds.
3. Place zucchini rounds onto a non-stick sprayed baking sheet.
4. Spread the spaghetti sauce on the top of each round.
5. In a large bowl, combine the cheese, sour cream, mayonnaise, cottage cheese and spices, mixing well.
6. Put one or more teaspoons full of this mixture onto the top of each round.
7. Bake for 5 to 7 minutes or until the tops are golden brown.
Note: Allow to cool before eating as the cheese mixture will be very hot inside.

Yield depends upon the size of the zucchini. If you get 20 slices from each zucchini, the yield is 120 appetizers.
These can be refrigerated and served cold, or warmed in the oven or microwave.
